    This cracked wheat and milk is a warm and comforting hot breakfast cereal. It is cracked wheat cooked in milk, sweetened lightly, and flavored with spices.

    This cracked wheat and milk is a delicious hot breakfast cereal, it has a creamy texture kind of like rice pudding, and is similar to the Indian dessert meetha dalia.

    We grew up eating cracked wheat porridge for breakfast, we like to serve it with muffins, like these whole grain blueberry muffins, or carrot muffins and fresh fruit for a wholesome breakfast.

    This is a great way to add more whole grains into your diet. And is a much healthier option compared to conventional cereals.

    You could also enjoy this for a lunch time dessert with a dollop of whipped cream and some fresh berries.

    • 100% Whole Grain: This recipe is made with cracked whole wheat berries, you can also use cracked multi grain.
    • Good source of protein: When made with cow’s milk this hot breakfast cereal contains 12 grams of protein per serving.

    Ingredients and Substitutions

    • Cracked wheat: We use coarse cracked wheat, you can also use cracked multigrain cereal. If you can’t find cracked wheat then you can make your own.
    • Milk: We use whole cow’s milk most of the time but you can use almond milk or another plant milk. 
    • Sugar: You can use any sweetener you like. We typically use organic cane sugar but maple syrup, coconut sugar, brown sugar or panela would be good options. 
    • Spices: We use Cinnamon and Cardamom but feel free to use whatever sounds good to you.
    • Vanilla extract
    • Salt 
    • Toppings of choice: We like topping it with fresh fruit, nuts and yogurt

    Variations

    • Add a little butter for a rice pudding like dish
    • Stir in some raisins after cooking
    • For dairy-free options use almond milk or coconut milk

    Bring the milk to a simmer in a large saucepan. Whisk in the rest of the ingredients.

    Simmer, stirring occasionally, for 20-25 minutes or until the wheat is tender.

    Tip: If it looks like it is going to run out of liquid before it is done cooking then add a splash of water or milk.

    Serving Suggestions

    We like to top our cracked wheat and milk with yummy stuff to complete the dish, here are some ideas.

    • Fruit: fresh berries, chopped mango, peaches, plums, fruit topping 
    • Nuts: Pumpkin seeds, hemp seeds, chopped pecans, chopped walnuts, slivered almonds
    • Yogurt: We like adding something creamy like yogurt, or if we’re feeling indulgent then whipped cream
    • Chopped fresh apples, pecans, yogurt or whipped cream and a sprinkle of cardamom
    • Bananas, a drizzle of peanut butter and yogurt

    Storage

    Store leftovers in an airtight container in the refrigerator for up to 1 week.

    To reheat, place in a saucepan over low heat, add a splash of milk or water. Stir occasionally until warmed through.

    Don’t let the cracked wheat run out of liquid while cooking, if it has soaked up all the liquid but the wheat is still chewy then add a splash of water or milk.

    Ingredients

    • 4 cups (960 g) Whole milk or milk of choice
    • 1 cup (200 g) Coarse cracked wheat
    • ¼ cup (52 g) Organic cane sugar or sweetener of choice
    • ½ teaspoon Vanilla extract
    • ½ teaspoon Cinnamon
    • ⅛ teaspoon Cardamom
    • 1 pinch Salt

    Instructions

    • Bring the milk to a simmer in a large saucepan, whisk in the rest of the ingredients. Cover and simmer, stirring occasionally, for 20-25 minutes or until the wheat is tender.
