These healthier chocolate chip muffins are made with 100% whole wheat flour. Making them much better for you. They keep you full longer and provide you with a nice dose of fiber and vital nutrients. Even though they are whole grain they still taste like a traditional delicious muffin.
1cup(120g)soft white wheat flourhard white works as well
⅓cup(80g)granulated cane sugar
1teaspoon(1teaspoon)baking powder
⅛teaspoon(⅛teaspoon)sea salt
¼teaspoon(¼teaspoon)ground cinnamon
½cup(120g)buttermilk
¼cup(56g)butter, melted
1large(1large)egg
1teaspoon(1teaspoon)pure vanilla extract
⅓cup(60g)chocolate chips
Instructions
In a large mixing bowl whisk the dry ingredients together.
1 cup soft white wheat flour, ⅓ cup granulated cane sugar, 1 teaspoon baking powder, ⅛ teaspoon sea salt, ¼ teaspoon ground cinnamon
Add the wet ingredients and whisk until combined.
½ cup buttermilk, ¼ cup butter, melted, 1 large egg, 1 teaspoon pure vanilla extract
Fold in the chocolate chips.

Generously grease or line with paper liners a standard size 6 cup muffin pan. Divide the batter evenly between the cups, they will be quite full.
Bake at 400° for 14-16 minutes or until a toothpick inserted in the center comes out with a few crumbs. Remove the muffins from the pan and eat warm or let cool before storing.
To Make overnight
Mix the batter as usual but leave out the chocolate chips. Cover and refrigerate overnight. When ready to bake, fold in the chocolate chips and bake as usual. They might need a minute or two longer in the oven to account for the cold batter.
Notes
Be very careful not to overbake or your muffins will be dry.Muffins bake faster on convection mode than standard bake mode. They also bake faster in a dark colored muffin tin than a light colored tin.Double recipe for 12 muffins.
