These no bake cookies are like little circles of fudge filled with oats, nuts and coconut. They come together in under 10 minutes and only need a few minutes in the refrigerator to set.
Place the sugar, butter, cocoa powder, milk, vanilla and salt in a small saucepan over medium heat. Whisk until the butter is melted and everything is well combined. Bring to a boil and cook for 1 minute, stirring constantly, the mixture should be shiny and thickened.
½ cup (90 grams) Coconut sugar or Sucanat, 3 tablespoons (18 grams) Unsweetened cocoa powder, 4 tablespoons (52 grams) Butter, 4 tablespoons (60 grams) Milk, ½ teaspoon Vanilla extract, 1 pinch Salt
Remove from the heat and stir in the oats, nuts and coconut.
1 cup (105 grams) Quick oats, ⅓ cup (40 grams) Chopped nuts, ⅓ cup (28 grams) Shredded coconut
Drop onto the prepared sheet, using a 1½ - 2 tablespoon cookie scoop or spoon. Flatten with damp fingers if desired. Refrigerate for 20-30 or until set. Store in the refrigerator.
Notes
You can omit the nuts and coconut and use 1⅓ cups of quick oats.
